The PUTTU way

Puttu with Kadala Curry

My dear hubby remarked yesterday its been long since we had puttu. Let’s have puttu for breakfast tomorrow. I agreed with a sight aversion as it requires time to prepare it. Being a Sunday at times I do feel I need to prepare something special while at the same time you have this relaxed laid back attitude and want to go for something special.
Anyways I decided to go the puttu way and soaked chick peas overnight. Now puttu is a Kerala dish and had for breakfast. Its healthy and quite filling. There are many variants of the puttu it could be prepared in Ragi/ Nachani, Rice, Rava etc.  The one I prepared today was of brown rice and it could be teamed up with kadala (chick-pea) curry , chicken curry, pappadum, banana etc. Well we had it with the kadala curry and its always a hit.

You could either grind the rice or get the ready made ground brown rice flour. I took the latter option and used the Nirapara brown rice flour that you would get in any Kerala store.

Puttu with kadala curry

Ingredients –

  • Rice Flour
  • Coconut grated – 1 bowl
  • Salt – as per taste
  • Water

You would require the puttu maker for this dish.

Method –

Take the flour in a bowl and sprinkle warm water little by little. Do not pour large quantity of water, it shouldn’t turn to a paste. You should be able to bind it when held in your palm. You also need to sprinkle salt. Once done let it stay for 5 minutes as is.
Add around 2 spoons of grated coconut in the puttu maker. Next add some rice flour till 1/3rd the cylinder. Layer it up with coconut again. Once done add some more rice flour. Keep doing this till the puttu maker is to its full. Close it and place it on the lid of the cooker which is filled with water. It would take around 12 to 15 minutes to cook. If you would want to check you can insert the pin into the hole and check if it comes off clean or the flour is stuck to it. When done it would come off clean.

Remove it and serve it hot with kadala curry. My husband has it with sugar and ghee too. Its your choice on the accompaniment. If you have bananas they too go well with the puttu but I prefer it with the curry.

Try it out …its something different 🙂
